Add the balsamic vinegar and the chicken stock to the skillet. Crush the tomatoes with a potato masher and mix in the olive and raisin. Let simmer for 10 – 15 minutes to let the flavors combine, adding more chicken stock if necessary to achieve the desired consistency.

To serve, top each portion of pasta with basil, parsley and toasted pine nuts. Serve with some crustless bread alongside.
